This hint was given to me by my mother-in-law, Lucille. Before I met her, I thought you only made turkey for holidays.
She taught me that when life is overwhelmingly busy, roast a turkey. Don't bother with the stuffing or traditional sides.
The turkey will yield a week's worth of meals and keep everyone in the house fed.
This one went into the oven at eight o'clock this morning.

Oh my gosh....we are eating turkey right now! We cooked it on Wednesday! I love turkey any time of year, so we try and make one about every 6 weeks or so! Love it! And we didn't do the traditional sides this time either, but had our own veggies we canned and froze this summer! Yum! And....we love dark meat!
Just two of us so I roasted a chicken instead. AND made chicken noodle soup! Yum!
